<p>La segale, ancora relativamente poco consumata in Italia, è un cereale dalle molteplici proprietà e differenti applicazioni in cucina. Approfondiamo nel dettaglio che cos’è, quali sono le sue proprietà nutritive e i suoi tanti impieghi in cucina.</p>
<h2><span style="font-size: 18pt;"><span style="color: #737373;">Cosa è la segale?</span></span></h2>
<p>La segale, nota anche come segala, è un cereale appartenente alla famiglia delle graminacee; appartiene alla stessa famiglia del frumento e pertanto contiene glutine (anche se in percentuale minore rispetto ad altri cereali).</p>
<h2><span style="font-size: 18pt;"><span style="color: #737373;">Proprietà benefiche della segale</span></span></h2>
<p>La segale viene a tutti gli effetti considerata come un alimento altamente nutriente. Tra le proprietà benefiche possiamo elencare:</p>
<ul>
<li>Basso indice glicemico: con un indice glicemico pari a 45, la segale é tra gli alimenti consigliati per persone diabetiche</li>
<li>Coadiuva la digestione e regolarizza la funzionalità intestinale</li>
<li>Ricostituente: una sorta di “super food”. La sua ricchezza a livello di componenti la rende perfetta come alimento in tutti i regimi alimentari</li>
<li>Regolarizza la pressione sanguigna</li>
<li>Favorisce il controllo della flatulenza.</li>
</ul>
<p><span style="font-size: 18pt;"><span style="color: #737373;">Mix di culture e sapori: cosa è la salsa taramosalata?</span></span></p>
<p>Se leggete il nostro blog da un po&#8217; di tempo sapete che amiamo proporre ricette non solo saporite e divertenti ma soprattutto bilanciate nei grassi.<br />Con la ricetta di oggi vogliamo dare un <em>twist</em> non solo interessante dal punto di vista gastronomico ma anche salutistico per un’alimentazione sana ed equilibrata.  Per questa ragione vi proponiamo in abbinamento alle chiacchiere salate, la salsa taramosalata, una salsa tipica della cucina greca, israeliana, turca, preparata tradizionalmente con il tarama, uova di carpa in salamoia. Nella cucina moderna invece vengono usate uova di merluzzo, salmone o lompo.</p>
<h2><span style="font-size: 18pt;"><span style="color: #737373;">Uova di pesce come alternativa omega-3</span></span></h2>
<p>Dal punto di vista alimentare, le uova di pesce, in particolare quelle di salmone, costituiscono una potenziale risorsa nutrizionale avendo un alto contenuto di <a href="https://www.lipinutragen.it/omega-3-alleati-del-sistema-immunitario/" target="_blank" rel="noopener">acidi grassi polinsaturi ed essenziali omega-3</a>. Forniscono inoltre notevoli quantità di vitamine del gruppo B, soprattutto tiamina, riboflavina e niacina, vitamina D e E.</p>
<p><span style="font-size: 14pt;"><strong><span style="color: #737373;"><br />RICETTA NUTRI-LIPIDOMICA:<br />CHIACCHIERE SALATE DI SEGALE CON SALSA TARAMOSALATA</span></strong></span></p>
<p style="padding-left: 40px;"><em><strong>Ingredienti per le chiacchiere (dosi per 4 persone)</strong></em></p>
<ul>
<li>75 gr farina tipo 00</li>
<li>50 gr farina di segale integrale</li>
<li>1 uovo medio</li>
<li>2 cucchiai di vino bianco freddo frizzante</li>
<li>1/2 cucchiaino di bicarbonato</li>
<li>1 cucchiaio di olio extravergine di oliva</li>
<li>sale fino</li>
<li>1 cucchiaio di origano (opzionale)</li>
<li>pepe nero</li>
<li>½ litro di olio d’oliva (se si vuole utilizzare la frittura come metodo di cottura)</li>
</ul>
<p style="padding-left: 40px;"><em><strong>Ingredienti per la salsa taramosalata (una tazza):</strong></em></p>
<ul>
<li>250 gr di uova di pesce (salmone, lompo o bottarga)</li>
<li>1/2 cipolla bianca piccola</li>
<li>200 ml di olio evo</li>
<li>2-3 cucchiai di succo di limone</li>
<li>100 gr di pane in cassetta senza crosta</li>
<li>pepe nero e olive nere per guarnizione</li>
</ul>

<p style="padding-left: 40px;"><strong>PREPARAZIONE</strong></p>
<p style="padding-left: 40px;"><strong>Procedimento per le chiacchiere:</strong></p>
<ul>
<li>Mettere le farine in una ciotola e rompere al centro l’uovo. Aggiungere l’olio, il vino, il bicarbonato, circa mezzo cucchiaino di sale, un pizzico di pepe e una piccola manciata di origano (a piacere).</li>
<li>Iniziare a mescolare con una forchetta, poi continuare con le mani. Trasferire il composto sul piano di lavoro e impastare per qualche minuto.</li>
<li>Se necessario, aggiungere un altro pizzico di farina oppure un goccio di vino. Si dovrebbe ottenere un panetto liscio e omogeneo. Avvolgere l’impasto con la pellicola e lasciarlo riposare per 30-40 minuti.</li>
<li>Trascorso il tempo, tirare la pasta con la sfogliatrice, fino ad uno spessore di circa 2 mm, o anche più sottile se si preferisce. Si può usare anche il mattarello, servirà solo qualche minuto in più.</li>
<li>Tagliare la sfoglia a rettangoli o a losanghe e fare un’incisione al centro di ciascun rettangolo o losanga.</li>
<li>Se si vuole friggere: scaldare in una pentola ampia abbondante olio, preferibilmente d’oliva. Immergere le chiacchere, girandole per farle cuocere su entrambi i lati. Man mano che saranno pronte, scolarle sistemarle sulla carta assorbente.</li>
<li>In alternativa alla frittura: disporre le chiacchiere su una teglia da forno con carta forno. Cuocere in forno preriscaldato ventilato a 180° per 20 minuti circa girando le chiacchiere a metà cottura. Ovviamente, utilizzando la cottura in forno, verranno meno bollose e meno friabili.</li>
<li>Salare ancora un po’ e servire calde.</li>
</ul>
<p style="padding-left: 40px;"><strong>Procedimento per la taramosalata:</strong></p>
<ul>
<li>Tagliare il pane e immergerlo in acqua per qualche minuto; strizzare per bene.</li>
<li>Nel mixer frullare uova di pesce con succo di limone, pane ed olio a filo fino a formare una crema.</li>
<li>Versare la crema in una ciotola e guarnire con un filo d’olio, pepe nero, origano e olive.</li>

<p style="text-align: left; padding-left: 40px;">Grate the organic tangerine zest and save it for later. Squeeze out the tangerine juice and save it for later.</p>
<p style="text-align: left; padding-left: 40px;">In a kitchenaid (robot) put the raw shelled nuts and the shelled Macadamia nuts, add the dried stoned dates, tangerine zest and juice, all the seed and the sea salt. Blend until all the ingredients are well mixed together but not compacted.</p>
<p style="text-align: left; padding-left: 40px;">Take a small amount of dough (10-15 g) and form small balls and then roll its into the locust bean flour.</p>
<p style="text-align: left; padding-left: 40px;">Place its into a tray and put its into the freezer for half an hour.</p>
<p style="text-align: left; padding-left: 40px;"><strong><u>Preservation:</u></strong> this snack can be stored in freezer for a month.</p>

<h2><span style="color: #737373;">Nuova ricetta lipidomica per il Carnevale<br /></span></h2>
<p>Le chiacchiere, anche dette frappe o crostoli, sono un dolce povero per semplicità e numero di ingredienti. L’origine delle chiacchiere risalirebbe all’antica Roma in cui venivano preparati, in occasione dei Saturnali, dei dolci di farina e uova che venivano fritti nel grasso di maiale ed erano detti <em>frictilia</em>.</p>
<p>La ricetta di base non è cambiata molto a parte variazioni tipicamente regionali come il mezzo di frittura, che è passato dallo strutto a vari tipi di oli vegetali, oppure il marsala utilizzato per aromatizzare e rendere friabile la sfoglia che può essere sostituito dal vino bianco, dalla grappa o dal vinsanto.</p>
<h3><span style="color: #737373; font-size: 18pt;">Ricetta<br /></span></h3>

<li>125 g di farina di grano tenero tipo 2</li>
<li>20 g di miele</li>
<li>15 g di marsala</li>
<li>20 g di olio extravergine d’oliva</li>
<li>1 uovo</li>
<li>5 g di scorza di limone</li>
<li>5 g di lievito per dolci</li>
<li>1 cucchiaino di zucchero di cocco bio a velo</li>

<p style="text-align: left; padding-left: 40px;">Versare la farina su di una spianatoia, unite il lievito per dolci, la scorza grattugiata del limone, il miele, l’olio d’oliva, l’uovo. Impastare il tutto con le mani aggiungendo il marsala finché gli ingredienti non saranno ben amalgamati. Lasciare riposare l’impasto coperto, in frigo, per circa 40 minuti.</p>
<p style="text-align: left; padding-left: 40px;">Trascorso il tempo di riposo, mettere l’impasto sulla spianatoia e tirare una sfoglia spessa 2-3 millimetri. Con una rotella festonata tagliare dei rettangoli creando un altro taglio al centro.</p>
<p style="text-align: left; padding-left: 40px;">Disporre i rettangoli in una teglia da forno ed infornare a 150° C fino a doratura. Disporre su un piatto e spolverizzare con dello zucchero di cocco ridotto a velo.</p></div>
